Coconut Rice Porridge


Ingredients

  • basmati rice (1-2 cups)

  • 1 tin of organic coconut cream

  • a pinch of salt

  • 1/2 tsp of cinnamon

  • 2 cardamom pods or 1/4 tsp of cardamom powder

  • 1 teaspoon of fresh grated ginger

  • optional: add a few dates, nuts and maple syrup to taste


In a pot, combine your rice , water and salt, and cook it on low heat for about 15 minutes or until the rice is cooked

Once the rice is cooked, add in the coconut milk, cinnamon and cardamom and cook on low heat until thick, about 10 minutes

Add a few sliced dates, maple syrup and any nuts you like on top.
